QUICK & EASY OVEN BAKED SALMON

Weeknight meals are the trickiest in this house but this one right here is the quickest and easiest high-end meal I can produce. It’s a hit and the family never tires of it. That is hard to do. This one bowl, one sheet pan recipe is also easy to clean up. This might be the unicorn of dishes so sprinkle those seasonings like glitter, baby. Hope you enjoy this dish as much as we do!

Ingredients

  •  lime slices — for prep
  •  1¼ pounds salmon fillet
  •  2 tablespoons honey
  •  2 cloves minced garlic
  •  3 tablespoons melted butter
  •  ½ teaspoon salt
  •  ¼ teaspoon black pepper
  •  ¼ teaspoon minced ginger
  •  1 tablespoon bajan (green) seasoning

Recipe

  1. Squeeze 1 lime and sprinkle a generous amount of salt over the fish. Let the salmon “soak” for 30 minutes.
  2. Preheat the oven to 375ºF.
  3. Line a sheet pan with a large enough foil sheet to fold over and seal the fish.
  4. In a small bowl, whisk together garlic, bajan seasoning, ginger, honey, salt, pepper and melted butter.
  5. Wash off salmon, pat dry and place on the prepared baking sheet.
  6. Pour the butter mixture over the salmon.
  7. Fold the sides of the foil over the salmon. Make sure it is well sealed so that the sauce does not leak.
  8. Place the pan into the oven, and bake until cooked, about 12-16 minutes.
  9. Open the foil, and broil the fish for 2-3 minutes. Watch the fish carefully so it does not burn!
  10. Remove from the oven. Using a spoon, pour some of the butter sauce left in the foil onto the salmon before serving. Then, garnish with parsley.
